PALATE

VINTAGE
2013 Vintage – began with a cool, wet winter, filling the soil with moisture. A cool humid spring opened up to an exceptional sunny and dry January, February and March: bringing forward an early harvest – Outstanding Vintage!
 
WINEMAKING
The grapes reached excellent ripeness – with high acidity and low PH. Picked on 10th April crushed into open fermenters, with time on skins extended to 2 weeks in total. The skins are plunged three times daily at peak ferment to build the body & natural tannin profile of the wine protecting colour extraction & increasing cellaring potential. The wine was then pressed off skins into tank to finish malolactic fermentation and allowed to naturally clarify before maturation in barriques for 18 months.
